Vegan Protein Choc Cookies (and) Protein Ice Cream Sandwiches - JW Diary

Serves:

Time: 20-30 mins

  • For Cookies:
  • 1 cup peanut flour
  • 3/4 cup oats
  • 1/4 cup PSA Vanilla Pea Protein
  • 10 medjool dates
  • 1/4 cup unrefined coconut oil, melted
  • 1/2 cup soy milk
  • 1/4 cup chopped dark chocolate
  • 5 tbsp cacao
  • 2 tbsp flaxmeal
  • 2 tsp baking powder
  • For the ice cream (for 2 Ice Cream sandwiches):
  • 1 frozen banana, chopped
  • 2 tbsp PSA Vanilla Pea Protein
  • 4 tbsp soy milk
  • 1 tsp mesquite powder (optional)
  • 2 squares of dark chocolate

Step 1

For the cookies:

Preheat oven to 180ºc and line a baking tray.
Cover dates in boiling water.
Once dates are soft, throw into a food processor along with every other ingredient except the dark chocolate and the flax meal. Blend till' combined and dough-like.

Step 3

Remove mixture from food processor and into a bowl.
Now add the chocolate and the flax meal and mix into the dough with your hands.
Depending on how big or small you like your cookies, roll the mixture into roughly 16-20 balls.
Now shape each ball into desired cookie shape and place on lined baking tray.

Step 4

Bake for 12-14 minutes, depending on your oven.
Let baked cookies sit on baking tray for 10 minutes, then transfer to a cooling rack.

Step 5

For the ice cream (for 2 Ice Cream sandwiches):

Step 6

Blend all ingredients except the dark chocolate, in a high-quality blender.
If your blender struggles to blend ingredients, use a stick blender.
Sandwich mixture in between two Vegan Protein Choc Cookies and freeze for 5 minutes.

Step 7

Melt dark chocolate in microwave and drizzle over the top of the cookie sandwiches then return for sandwiches to the freezer for a further 5 minutes.
When the chocolate is hard, the sandwiches are ready to eat.
