It is also a good source of Vitamin E (Alpha Tocopherol), Thiamin, Niacin, Vitamin B6, Folate, Iron, Magnesium and Phosphorus, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Riboflavin, Potassium, Copper and Manganese.

#Recipe as follows:

Pumpkin Spice Eggnog Protein Smoothie

Serves: 2

Time: 5-10 minutes

  • 1.5 cups of cooked pumpkin
  • 1 raw egg
  • 250 ml liquid, you could use water to keep calories low or a creamy alternative, vitasoy low fat coconut milk
  • 1 block frozen spinach (approx half a cup to a cup fresh)
  • 1/2 a cup of ice
  • 1/2 tsp vanilla essence
  • 1/2 a teaspoon of nutmeg
  • 1 tsp flax seed oil
  • pinch of Himalayan salt
  • 1 teaspoon cinnamon
  • 1 serve of vanilla protein: I use PSA's Paleo Pro Vanilla Bean
