Protein Rice Pudding

Paleo Pro Rice Pudding

Serves: 1

Time:

  • 2 Cups Cauliflower Rice
  • 60g Vanilla Paleo Pro
  • 1/4 to 1/2 a cup of unsweetened almond milk
  • Stevia or another natural no calorie sweetener of your choice
  • Toppings of your choice

Step 1

Combine your protein powder with the almond milk and sweetener. Add the milk in small amounts, as the amount you need will vary depending on the protein you've used. Aim for a thick pudding-like consistency.

Step 2

Stir in your cauliflower rice. It works best if it's slightly warm. You could use actual rice if you have the carbs for it

Step 3

Top your pudding with some yummy toppings and enjoy! *I make my cauliflower rice by finely chopping up raw cauliflower in my food processor and then baking it at 180°C (356°F) in one thin layer on a tray. This ensures that it stays dry and doesn't get mushy
