Cinnamon and Apple Protein Muffins
Serves: 18
Time: 1.5 Hrs
- 2 cups Protein Supplies Australia Vanilla and Cinnamon BioPro
- 2 cups organic wholegrain spelt flour
- 3 large green apples, peeled and grated
- 2 tsp cinnamon
- 1/2 tsp all spice
- 1/2 tsp nutmeg
- 1/2 cup coconut sugar
- 1+ 3/4 cups of nut milk (I used almond)
- 3 tbsp arrowroot powder
- 1 tsp bicarb soda
- 1 tsp baking powder
- 150g unrefined organic coconut oil, melted
- 1 cup coconut yoghurt
- 3 tbsp apple cider vinegar
Step 1
Heat oven to 140ºc and fill a muffin oven tray with patty pans.
Sift PSA protein, spelt flour, spices, arrowroot, bicarb and baking powder into a bowl.
Step 2
Add coconut sugar, mix to combine.
Melt down coconut oil, set aside to cool.
Peel and grate apples in a seperate bowl.
Add nut milk and coconut yoghurt to grated apple, mix to combine.
Add coconut oil to apple mixture.
Mix together wet and dry ingredients.
Step 3
Add apple cider vinegar to mixture.
Mixture will be incredibly thick - that's okay.
Once combined, spoon mixture into patty pans until full. (Roughly 2 heaped tbsp).
Toppings optional (granola, coconut sugar).
Step 4
Cook for roughly 50 minutes.
Leave to cool in tray.
Serve as is, or with coconut yoghurt, fresh fruit
